The Moment of Separation: Wine and Skins

The Moment of Separation: Wine and Skins

Today marks the moment when our wine is gently separated from the grape skins after fermentation.

This stage, known as pressing, is an important transition in the life of the wine. During fermentation, the skins have given the wine its color, structure, and many of its aromatic compounds.

Now the wine begins a new phase as it is carefully moved away from the pomace. Handled with patience and precision, this process helps preserve the purity and balance developed during fermentation.

The young wine slowly reveals its character as it prepares for the next stage of maturation. Another quiet but meaningful step has been completed in the journey from grape to bottle.
