Vineyards

In 2015, Ayda Winery & Vineyards was established at an altitude of 400 metres, on land which has a very special geological structure. Ayda Winery & Vineyards, built together with friends, became the meeting point of friendship, sedulity, harmony and flavour. In this Vineyard, 7 varieties of grapes are grown. As for white grapes these are: Sauvignon Blanc, Narince (indigenous) and for red grapes: Cabernet Sauvignon, Foça Karası (indigenous), Petit Verdot, Merlot and Syrah. It is possible to tour around the vineyard, taste the wines and have informative presentations about the production procedure. You can also look forward to enjoy the stunning view accompanying your tasty wine and compatible meals, prepared at the restaurant.

Soil Structure

Ayda Winery & Vineyards, which is located near Gödence village, stands in the middle of a sloped valley surrounded by high mountains. The vineyard is planted on north-southwards terraces with a 1,5 m gap between each terrace and a 1 m spacing between each vine-stock. The soil texture is sandy, clayey and stony while the pH value is 6 on average. While this structure, also known as sandstone, is mineral-rich, it also has the ability to retain water. Thanks to this structure the roots can grow tens of metres deep to reach water and rich minerals with sufficient nutrients.

Grape Varieties

Ayda Winery Vineyards is located at an altitude of 400 meters. This location has many advantages dueto its terroir. In the vineyard there are Sauvignon Blanc, Cabernet Sauvignon, Syrah , Petit Verdot, andMerlot which originated in France are grown as well as local grapes such as Foça Karası and Narince.Preferring grapes with high aging performance, Ayda Winery also takes care to choose varieties suitablefor the soil structure and climate of Gödence. French- origin grape varieties such as Cabernet Sauvignon, Sauvignon Blanc, Syrah, Petit Verdot andMerlot create significant regional differences in wines, with their high acidity, minerality and fruitiness dueto the location of the vineyards, soil structure, altitude and the effect of the mediterranean sun. Foça Karası, a red grape from local grapes, was first promoted and propagated by Volkan Sucukçu. AydaWinery’s saplings, which have been established at 300 roots since 2003, reached 3000 roots in 2015.Foça karası was first used at a rate of 20% in Vinaida 5 labeled wine in 2018, and since 2021 it has startedto be produced as mono sepage with Vinaida 1 label and its first harvest was reached 580 bottles ofwine.Another local grape, Narince, is a white grape grown in the Tokat region. Narince is one of the specialgrapes among the Anatolian originated grapes. Ayda Winery first produced Vinaida 2 Derin wine asNarince ( 60%) and Sauvignon Blanc (40%) blend with wild fermentation in 2020.
